
Catfish
January has started, a new month in a new year. A year in which hopefully the pandemic will end and we can look forward to the bright future. We are hoping for a better year for everyone! This year, Amacore keeps continue sharing delicious recipes with you.
January 2021 at Amacore is all about the Catfish. Our Catfish is a freshwater fish that originates from a natural cross between two species from the Catfish family. The fish is excellent to use as a sustainable replacement for overfished fish species. The Catfish of Amacore is grown in the Netherlands in covered fish ponds with a unique circulation system that only uses minimal amounts of water. Catfish has a high content of omega 3 fatty acids and with the firm structure and mild taste, this fish is extremely suitable for various culinary purposes.

Spicy Noodle soup with Catfish
I N G R E D I E N T S | 4 Persons
- 400 g Catfish fillet
- 100 g Rice Noodles
- 1 Onion
- 100 g Fresh cabbage
- 1 Carrot
- 200 g Mushrooms
- 60 ml Olive oil
- 70 g Green curry paste
- 400 ml Water
- 400 ml Coconut milk
- 100 g Peas
- 4 tablespoons Soy sauce
D I R E C T I O N S
- Boil the rice noodles in salted water until soft, rinse under cold water and put aside.
- Chop the onion, fresh cabbage, carrot and slice the mushrooms. Heat a little olive oil in a pan. Add the onions and mushrooms to the pan and season lightly with salt until brown. Add the cabbage and carrots and cook over medium heat until the vegetables are tender.
- Heat a little olive oil in a pot with a thick bottom. Add the green curry paste and cook for a few minutes. Then add the water and coconut milk and bring to a boil.
- Cut the Catfish fillet into pieces and bring together with the peas to a boil. Season with soy sauce.
- To garnish your dish, first put the noodles in the bowl, then the vegetable mixture. And finally pour the curry mixture with fish over the noodles.
