Scampi Diabolique

I N G R E D I E N T S                      

  • 28 scampi, peeled
  • 2 shallots, finely chopped
  • 1 clove garlic, pressed
  • 1 red pepper, cubed
  • 1 courgette, diced
  • 150 ml white wine
  • 250 ml cream
  • 4 tbsp tomato puree
  • 2 tomatoes, diced
  • butter
  • pepper – salt
  • paprika – cayenne pepper

Heat butter in a pan and fry the scampi briefly. Season the scampi with salt and pepper and remove them from the pan. Set the fried scampi aside.
In the same pan, add the shallot, garlic, peppers and courgette. Leave these to stew for a few minutes until they are almost cooked. Now add the white wine, cream and tomato puree. Let this reduce for a few minutes and season the sauce with paprika, cayenne pepper and salt. Now add the prawns and mix through the sauce.
Just before serving, stir the diced tomatoes through the dish. Finish off with finely chopped parsley and serve the scampi diabolique with bread, rice or pasta.
