
Black Cod
It is time for a new recipe, this month with black cod! While black cod may share a similar appearance to cod, they are not member of the cod family. Black cod has a flaky, oily flesh with a soft buttery texture , and pearly white color. They are one of the most rewarding species to bring into your kitchen!

Honey Garlic Black Cod
Amacore’s monthly monday menu presents a buttery, flaky and pan-seared black cod with a sweet, savory and garlicky taste. Pair it with broccoli for a restaurant quality meal that is ready in minutes. It is popular around the globe and can be found on the menus of the world’s most exclusive restaurants. Black Cod contains the highest level of omega-3 content of any white fish, which makes this fish super healthy. This Honey Garlic Black Cod recipe is ready in about 20 minutes. And that’s even if you forget to thaw the fish (because it can be cooked from frozen)!
I N G R E D I E N T S
- 4 black cod filets (110 gram each)
- 340 gram of fresh broccoli florets
- 3 tbsp grapeseed oil & coconut aminos
- 3 tbsp soy sauce
- 5 tbsp honey
- 1 tsp toasted sesame oil
- 4 cloves fresh garlic, grated
- 2.5 cm of fresh ginger, grated
- ½ tsp crushed red pepper flakes
- Cooked rice for serving (optional)
I N S T R U C T I O N S
- Preheat the oven to 200°C and sprinkle a baking sheet with oil. Set aside.
- Whisk 2 tablespoons grapeseed oil, coconut aminos, honey, toasted sesame oil, garlic, ginger and red pepper flakes in a medium bowl until well combined. Or shake all ingredients in a jar with a lid.
- Add ⅓ cup of honey garlic sauce to the broccoli florets in a large bowl. Toss to coat. Place on a prepared baking sheet in a single layer. Roast 15 minutes, or until the broccoli is caramelized.
- Pat the fish dry. Season with coarse salt and cracked black pepper.
- Heat a large frying pan over medium-high heat with 1 tablespoon grapeseed oil. When the oil is hot but not smoking, add the black cod with the skin side up. Cook about until seared and golden, about 4 minutes. Then flip.
- Add the remaining honey garlic sauce to the skillet. Cook about 5 minutes, until the sauce is reduced by about half and the fish is cooked to 60°C. Generously baste the cod with the sauce. Serve warm with a side of warm broccoli and rice, if desired.
