Tuna
Yellowfin tuna, a member of the mackerel family, is a warm-blooded fish known for its beautiful red flesh. It is characterized by a cobalt blue to black back with a long yellow belly and dorsal fin. Yellowfin tuna is a fast-growing species and can reach an age of 9 years. Amacore sources its Yellowfin tuna from the Indian and Pacific Oceans. The tuna meat remains firm and bright red, even after thawing. It can be prepared by baking, grilling, or smoking and is also excellent for Sashimi or sushi.
