Oilfish, also known as Escolar or Butter Mackerel, is sourced from the sandy bottoms of the deep oceans around Indonesia, Vietnam, and Taiwan. These species have an elongated body and can grow up to 2 meters long. Oilfish meat has a firm texture, intense flavor, and is rich in omega-3 fatty acids. It is easy to prepare and ideal for smoking, baking, grilling, or steaming. making it very popular in (sushi) restaurants. That makes this fish very popular in (sushi) restaurants. At Amacore, Oilfish is available year-round as fillet, loin, steak, and even as a saku block.
